Ok... so just a couple of stupid questions. Would it be ok to leave the freon and "guts" in the fridge if it's not in my way? And also, what would be the best place to drill holes for the wires to run out?

yes you can leave everything just make sure your not going to drill through any of the parts that have freon in them. you can drill your holes wherever you need them as long as no lines or coils are in the way

Totally agree, with janjgeckos for placement of the wires.

If you are not using the fridge ever again to cool. I would call around to a few kitchen appliance repair shops and see if one of their techs can come and remove the freon. I am not sure of the cost, but I know that people in my area that pick up scrap metal and appliances always charge a $10 fee that they say is for the removal cost of the Freon.

If you remove the refrigeration parts it will be a lot lighter but if nothing is in your way there is no real reason to remove it. Although I would remove the power cord so that it dont get plugged in by mistake.

Well, got the freon drained (it's good having a dad who did refrigeration). Got it gutted. One of the tubes I removed left a hole open just big enough to run a cord for the heat tape out of. It was the only hole. That'll make things alot easier. What kind of thermostat would you guys recommend?

I normally recommend RANCO, but in this case I would say to spring for a Herpstat or Helix. The ON/OFF thermostat is not as nice when you are incubating eggs.
