Hi I have a leopard gecko and I'm wondering how offer should I completely clean out and change her enclosure and put new sand and moss in there for her

Most people don't use sand because it's difficult to keep clean and can be swallowed and cause digestive issues such as impaction. If you're open to changing the substrate you use, I'd highly recommend a non-particulate substrate like paper towel or brown kraft paper that is easy to change often and clean. People also use things like bathroom tiles to cover the floor for a nicer look.

If you insist on using sand, I would suggest spot cleaning often to remove feces and totally switching out the sand every 2-3 months. If the terrarium develops a smell, you may need to clean more often. It depends how diligent you are about spot cleaning. Moss in humid hides should be replaced more often, every month at least.

Well we got the calcium sand for her and she's doing fine with it and I'm pretty diligent about the spot cleaning and have been moistening her moss every morning and changing it out every few weeks does that sound okay?

That sounds good for keeping her clean. Just stay vigilant if you're going to use sand. Besides eating too much of it, geckos can also get shed skin stuck on them that gets coated with the sand and sort of cements on there. I had a rescue lizard once with that problem, and it took a lot of soaking and patience to get it off. :(
