My leopard gecko keeps lifting up his back legs! Is this normal?

You mean standing in place and lifting them up and putting them down? It's probably fine, but I'd need a little more info.

when he eats he lifts up his left leg a lot. kinda like he's stretching it.

Nothing strikes me as problematic. Maybe get some good workout music for him!

he is very energetic! Caught me by surprise because people are like oh he will hide and not eat as soon as you bring him home… not him not at all. lol he comes out as soon as he hears me and eats a lot! Not as skittish as I thought, but some music hmm I wonder what he likes?
