I was wondering... what happens to the offspring of a mating that are not the attempted pairing. for example the one offspring that looks like a normal leo but has all the resessives for the morphs?

like a normal het albino X a normal het albino?
in this case (like for het blizzard normals) you will have 50% normal (with some possibility to be het) and 50% albino...

are these offspring that look like normals but carry the het genes for the morphs sold for generally the same price as a "normal" or do the het genes raise the value of the babies?

It depends on the morph genes the gecko is het for. Hets have value to specific breeding projects, otherwise they are usually sold as 'normals'.

I know my genectics are a bit weak but wouldn't there still be a chance of the morphs being produced by the "normals", I would think they would all be carrying the het genes wouldn't they?

Supply and demand is what you are looking at.

Unless it's, say and exeptional SHTCTB het for one of the albinos, which would make it likely to produce some awesome Hybinos, then you may be looing at a higher price. But at the same time, if you are an unknown breeder you still may not get the price you want.
