Help!

My girlfriend has had her leo for about 4 years now. She started with 2 and a few months ago the male suddenly passed, right around the time the female was having a hard time shutting and keeping her eyes closed/open. We had her on an antibiotic and pain killer and well as feeding her baby food from a syringe.

For the first 3 years they were fed live crickets, but after her being blind we decided to use mealies and a few waxworms here and there (this change happened about a month and a half ago, maybe longer). In the past 2-3 weeks she has been acting funny, she is really jumpy when you get near the tank or when you put your hand in the tank.

Could she be sick, or is this just due to the new diet? We also, around the same time as the diet change, started giving her access to supplements ( a dish of powder), and put in a humid hide, both of which are new to her. Could it be stress of a new setup or the diet change?

I don't think the diet change would cause jumpiness, however you mentioned vision problems. If her vision is deteriorating it could be that she is having a hard time distinguishing what is moving, thus making her uneasy. A change in the environment can also cause some stress, and of course different animals react differently to stressors. Some become agitated, and some become reclusive. Think of how she has reacted in the past to stressors. If you think it might be an illness, then only a qualified vet can help you out with treatment.
