Is it possible to split the single output to two separate racks that were under the 700 watt output?

You can, but the racks will have to be identical. Or else the temps will be off since the thermostat only has one probe

I bought one this weekend and was told the same - as long as the racks hold similar temps you can hook 2-3 up to it (as long as they're below the max wattage) using an extension cord
