If I breed a high yellow male with a high yellow female, wouldn't I just get more high yellows or is that not how it works? I have never done this with leopard geckos. Any advice would be great.

In general, High Yellow and High Yellow will create more High Yellows. The exact results depend on whether the geckos are carrying any hidden, recessive traits (hets).

I'd strongly suggest reading up on leopard gecko genetics and breeding:

It's generally frowned upon in the community to breed leopard geckos that you do not know the lineage/genetics for (bought from pet stores or shows with no breeder information). There are already a lot of these types of geckos on the market from pet stores, and it can be difficult to find good homes that want to care for an animal that can live over 15 years. It is like breeding mixed breed dogs when the animal shelters are already full.
