A gecko with a white or cream base and a cafe au lait or very light brown pattern, what would I look for? I don't really understand the morphology yet.

Hmmm.... Maybe something like a lavender Bell Albino? I would think that the Trempers are too orange now-days to get a light colored background. A Rainwater would be another option I suppose. It really just depends on the individual gecko. A Bell Albino Enigma might be closer to what you're looking for. You really just gotta look around. But you'll def want some sort of albino because you want brown pigmentation, not black. :)

I would said a SS Tremper Albino. Mack Snow Tremper might still developing some yellow.

The one below is my male Mack Snow Tremper Albino you can still seeing some yelow. but I think that the pattern color is what you are looking for.
