I take a regular head shot and then crop around the eye. Since pictures are already huge before resizing, once I crop the eye, the image is at a decent size already and there is no need to make the cropped image bigger.

Yeah, but your subject needs to be still! That's always my problem! :(
Once I am ready to press the shutter release, they move out of frame.

I prefer just cropping a close-up head shot using PhotoShop.
If the pic is already high rez, cropping an eye is no visible loss.

It depends on the camera you have.

If its a digi compact or hybrid then you can use the macro settings with a high resolution set and get as close as you can.

If you have DSLR there are a few things you can try - zomming and cropping, macro lenses - (very expensive) or if you wanted a cheaper and more adaptable option you could try extension rings and a small lens - will find the measurements for you.

You can get reasonable priced extension rings and you can add as many as you want so you can get the distance you like and they produce good results.

Here is my eye/head pic using the compact camera macro settings:
