I just noticed that her skin looks kind of chalky again. She just shed like a week ago! Is this normal or is a trip to the vet in order?

I would soak her in some luke warm water for about 15-20 minutes and then use a q-tip to gently roll it off from underneath and out. They make a liquid called Shed-Ease that we've used once or twice with no problems.
if you use the water make sure you change the water out every few minutes so they don't get to cold.
