Why is it an Eclipse Albino has red eyes, but a Snake Eyed Albino has black? Sorry for the weird question, just can't sleep and this question is stuck in my head. No more Crawfish before bed lol.

An animal expressing the eclipse and albino traits has red eyes (save for freaks), whether full or snake-eyed.

If you're talking about the so-called "Abyssinian", well, that's just a new trick for an old dog from the looks of things.

There are also "snake eyes" seen in non-eclipse eyes, such as in some Blizzards and a handful of odds and ends.

The intensity of the red can vary heavily between individuals, with deep, dark red appearing nearly black, so that's probably what is going on.
