Working on Christmas gift for my Grandson. I was thinking about a Exo-Terra Medium-Low (24x18x12) which you guys recommended a medium UTH (I ask about a Zoo Med).

Today I see that a pet supply store will be having the Exo-Terra Large (36x18x18) on sale for about $4.00 more than the Medium-Low.

Would the larger terrarium be the better choice for a single Leopard Gecko?

What size of UTH would be appropriate for the Large enclosure?

Would it be possible to use two Medium Zoo Med UTH's (8x12 each) attached to a Hydrofarm Thermostat to get the correct 1/3 area warm side??

We are newbies and appreciate any advice and thoughts you may have.

Bigger is always better.
You can make two separate heating spots or one big one. Just use either a medium or two smalls

In your opinion, will the height of 18 inch vs. the 12 inch make any actual difference in keeping the terrarium temperature where it needs to be?

Leos absorb heat through their belly from the surface of the bottom of the terrarium, the ambient temperature is of no significance, unless it's too high. Here's some info that I copied and pasted from our website that should help.
"Leopard Geckos are cold blooded and regulate their own temperature by moving from warmer areas to cooler areas as needed. In nature, they absorb heat through their belly from the surfaces they rest on. We recommend using an under tank heater (UTH) that spans about 1/4 to 1/3 of the floor space on one end of the enclosure. This set up allows the gecko to move to or away from heat within the enclosure in order to adjust its body temperature. This behavior is called thermal regulation and it is critical to their metabolism, digestion, egg development and immunity. The ideal temperature range for Leopard Geckos is from 70-74 on the cool side of the enclosure to 90-94 over the UTH on the warm side."

I got the 36x18x18 as well for a xmas gift from my mom. All I can say is bigger is better in the width not so much the height... That being said SPICE it up and throw in lots of hides for them :) Exo-Terra also sells ramps you can attach to the sides to help them climb ect making even more room for them. Only thing make sure you have enough heat pads to keep them warm :)
