why only one egg at a time?

In the past, Zsa-Zsa, my super healthy female has always laid clutches of 2 eggs. She has a new boyfriend but that is all that has changed really (aside from an real estate upgrade to a 20 gal tank). Now, she is laying only 1 egg at a time with the normal 2 weeks to a month in between each egg.
I also have a new Snow, who when we bought her had no idea that she was 'eggnant' nor did the breeder. When I called to tell him he was surprised too.
She also lays one egg at a time.
Does anyone have any idea why this happens?

The Snow aka "oreo' seems to maybe have some slight birth defects that we didn't notice when we bought her. (very slight) Her back seems to have a tough of scoliosis and her face, around her eyes seem a tad asymmetrical. I don't know if that would have anything to do with her laying only one egg at a time but just in case, I thought I should mention it.

We had a tremper albino that only laid one egg at a time. Our vet said that she was healthy....just only produced one egg at a time. When u would check for eggs one time u would see the egg developing on the right and the next time it would be on the left so both sides produced eggs ......just not at the same time for whatever reason.
