1 mating 2 clutches?

Is it possible for male to mate with female just once (remove him from cage) and have female lay 2 clutches? Reason i ask is my female layed eggs about 3/4 weeks ago and is already VERY eggy she is slowing down and not eating so i think she will lay again. Will they be fertile as well?

Yes that is completly normal

Our females usually lay anywhere from 3 to 8 clutches after a single mating.

Fertility depends on the amount of sperm retained by the female. We had one that laid 5 fertile clutches. We had one lay only one fertile clutch. I compare a fertile egg usually to a stale marshmallow. If the next eggs feel that way, then they are probably fertile. If you aren't sure, then incubate until they get nasty.
Also, depending on the female it is usually around every two weeks that they lay. Some develop eggs more quickly, some more slowly. 4 weeks isn't out of the ordinary.
