So I recently got some mealworms and had them for about a week they then turned into the beetles and I proceeded to feed a few to my gecko not even thinking or realizing the possibilty of impacting and I just tried to feed her a mealworm she took the first went after the second but rejected it a few times and ideas and or help

Just keep offering the mealworms and pass on the beetles (because they're mostly chitin). If the gecko continues to be stubborn and you don't mind, you could always switch to crickets or roaches or superworms.

Yeah geckos tend to refuse the mealworm beetles since they realize they're all crunchy worthless outside (chitin) and none of the yummy gooey middle :p Best bet is to purchase some more meal worms and keep them in the fridge so they don't turn to beetles as quickly. By the time those are gone your next batch that hatches from the eggs the beetles lay should be big enough to feed (about 8-10 weeks from beetle - medium sized mealworm).

I see that someone already mentioned this, but definitely consider keeping your mealworms in the refrigerator. It freezes their development and they will not turn into beetles.
