I know it's important to measure the temperature of the ground in the tank but is it also important to keep an eye on the temperature of the air? If the floor is hot enough does that usually ensure that the air above is plenty warm?

I'm also just curious, does anyone recommend a specific type of thermometer?

I don't worry about the air temp because I figure the air temp inside the hides is probably OK due to trapped heat, my home air temps are reasonable (not below 60) and there's nothing I can do about it anyway and my leos are thriving.

The best type of thermometer is a digital one with a probe that can lie on the floor. You can get one at many electronics stores,.
