If only one parent is het for albino, I understand that no offspring can be albino since they would need the gene from both parents...but would the offspring also be het for albino (from just one parent)? or would you not even mention that one parent is het for something?

The offspring has a 50% chance of being het for albino (and you can describe an animal for sale as 50% het for albino). The only way to tell if the animal is actually het for albino would be to breed it to an albino and see if you get albinos. Someone buying this animal would be taking a chance that it is albino and would not want to buy it if they definitely want to breed for albino.
