What is different in their needed diet at these different stages. It seems my beetles are eating all the eggs. Instead of the substrate. (though I cannot see it) what else should I be adding besides a mixtures of oatmeal, powdered milk, dry cereal, cat food, carrots, bread.

Hmm they have the same nutritional needs at each stage. Maybe overcrowding is the problem? If you have too many in one container they can result to cannibalism. In my beetle containers I put paper towel rolls. They enjoy those.

What makes you think they are eating the eggs? Probably aren't, unless the space is very small and you are not supplying enough moisture items. In this case the carrots...Maybe then they may eat them for moisture... Try some orange peels ... Corn Husks/Cob in there...Beetles like to hide, breed, lay eggs under the peels.and cobs.+ eat them for moisture..The meal worms will crawl into the husks to make harvesting somewhat like shaking apples out of a tree...take care...HJ........(I'll get a lot of MOLD comments about this) But...I do it without problems with mold.
I mist two or tree shots on the top of my meal worm boxes.
