Well Ive read up on keeping mealies, but the one thing I don't remember seeing is what size container to keep them in? I plan on buying and keeping ~500 at a time. Something with a big footprint, or tall and narrow? Obviously needs air holes, I was thinking I would get a hermit crab type container.

Tall and narrow makes it hard to get the mealies out (your hand can get stuck in there). Hermit crab containers are fine. I use the faunarium products which have the plastic lids with the vent holes.

We use 11qt sterilite tubs, they work just fine.

Here are pics of the beetles:

Wide and shallow works better than tall and narrow. If the mealworms are stacked too deep, the ones on the bottom will suffocate and die leaving a gross pile of mush that doesn't smell too great. Also, I prefer to keep them in tubs without any lids because they tend to give off a lot of condensation in quantity.
