Lol Liz, if you didn't live pretty much as far from me as you can (within the US) I would TOTALLY make you sushi for Christmas 
I guarantee you'd love it!
We would always gecko skeptics in our restaurant, saying "Blech! Sushi is nasty...it's raw, chewy, fishy fish!" Then we would make them one of our more "American" rolls, and they'd be back the next day, and the next...lol
