So I went to take Dusty (my gecko) out of his cage for play time today, and when i took him out and lay him on the bed he looked like he was about to poop so I put a paper towel under him and white stuff started to come out from near his tail and he proceeded to start to eat it!!! Is this normal or should I be worried?
I have owned 4 Leo's and have never seen one do this before.

He did just shed so that is a possibility for now he is under constant watch though. I do not need anything bad to go wrong :(
It could be he is not getting enough food or supplements in his diet if he is eating actual poop. If it's just shed than it's nothing to worry about.

I feed him phoenix worms and give him fresh water every day. He goes through about 500 worms a month. Shows no signs of any deficiencies and for the year I have had him has showed no ill signs other then today.

Are you giving him calcium and multivitamins?

There is no need to dust phoenix worms because they are balanced. On the other hand I am not sure if they provide enough protein to be fed as a stable. You also need to provide calcium with vitaminD and multivitamins sparingly. I suggest you add crickets or mealworms to his diet for variety.
