I thought this would be fun...sharing recipes! I always like to try new things and cooking can be fun! I guess I'll start :)

Stuffed Chicken Breasts:

2 Large, boneless/skinless chicken breasts (Split)
Stuffing (Make your own or boxed)
1 cup Marsala cooking wine (Roughly...use more or less to taste)
Swiss cheese

Cook the stuffing by either following the directions on the box or your own recipe (sorry, I don't have my own recipe for stuffing yet)

Split the chicken breasts and fill with stuffing

Grease a loaf pan (I prefer glass) and put the two breasts in. Pour the Marsala cooking wine over the top of the chicken. Slice the swiss cheese thinly and lay over the meat until it is completely covered.

Cook at 400 F until cooked all the way through (about 45 mins). I cover the top with aluminum foil for about 30 mins to help keep the moisture in.

Oh..and an edit to the above recipe. If you like your stuffing crisp and fluffy then add it AFTER you cook the chicken in the Marsala and swiss cheese. :)

Another good recipe:

Beer bread

12 oz beer of your choice, room temperature (regular Budweiser makes great bread. Darker brews make tangier, sweeter bread, I noticed).
3 cups self rising flour
2 tablespoons sugar
2 eggs

Preheat oven to 325 F

Beat eggs, add beer. Stir gently. Add sugar and flour. Beat until mixed but don't mix it too much (should be a bit lumpy). Cover and let the dough rise for 30 mins. Grease a pan of your choice..add a little olive oil or canola oil to the bottom. (Loaf pans work well, I usually use a rectangular 11x7 pan) Pour the dough into the pan. Cook until golden brown on top or cooked all the way through. (Approx. 20 - 30 mins)

A good variation is to add grated cheddar cheese to the top of the dough or mixed into the dough itself. :)

Whoa! That sounds delicious. I'll have to try that sometime. I'm a recipe collector myself even if I don't cook very often. :p I love to bake. Here's a recipe that is just AWESOME if you like apples. These squares are so moist!

APPLE SQUARES



1 cup flour 1/4 cup margarine

1 teaspoon baking powder 1/2 cup brown sugar

1/4 teaspoon salt 1/2 cup sugar

1/4 teaspoon cinnamon 1 teaspoon vanilla

1 egg

1/2 cup chopped cooking apples

1/2 cup chopped nuts or currants (optional) cinnamon sugar



1. Sift flour, baking powder, salt, and cinnamon together.

2. Melt margarine in medium size pot over medium heat. Remove from heat.

Beat in sugars, egg, and vanilla with wooden spoon until smooth.

3. Stir in flour mixture, apples and nuts or currants until thoroughly combined.

Spread into a greased 8"x8"x2" pan. Sprinkle batter with cinnamon sugar.

4. Bake at 350F for 30 minutes or until top springs back when lightly pressed.

Cool completely in pan, before cutting into squares.



Note : Fresh or frozen blueberries can also be used.

1 can drained white corn
1 can drained small black beans
1 can drained black-eyed peas
1 basket sweet grape tomatoes, cut in 1/2 or 1/4 pieces
1 small bunch green onions, diced
2 jalapeno peppers, diced and chopped
2 cloves garlic, finely chopped
small bunch cilantro, chopped
1/2 -1 cup Italian salad dressing

Cover in sealed container, lightly shake, and let sit in fridge for 4-6 hours. Goes really good with large Frito or torlilla chip scoops!

Home made Carrot Cake from the book "100 Things For Kids to Make & Do" by Marion Elliot, Petra Boase and Cecilia Fitzsimons. My aunt gave this book for Christmas one year and it's great for those creative people. The Carrot Cake I actually did myself. It's kind of messy but yummy and not overly sugary.

Carrot Cake

Ingredients:
- 2 Cups of self-raising (rising) flour.
- 2tsp baking powder.
- 1 scant cup of soft brown sugar.
- 4oz ready-to-eat dried figs, roughly chopped.
- 8oz Carrots, grated.
- 2 small ripe bananas, mashed.
- 2 Eggs.
- 2/3 cup sunflower oil.
- 3/4 cup cream cheese.
Optional
- 1 1/2 cup icing (confectioner's) sugar, sifted small colored candies, nuts or graded chocolate to decorate.

Directions:
1. Lightly grease 7in loose-base springfoam cake tin (pan). Cut a piece of baking parchment or greaseproof wax paper to fit the base of tin.
2. Preheat oven to 180F. Put the flour, baking powder and sugar into a large bowl and mix well. Stir in figs.
3. Using your hands, squeeze as much liquid out of the grated carrots as you can and add them to the bowl. Mix in the mashed bananas.
4. Beat the eggs and oil together and pour them into the mixture. Beat together with a wooden spoon.
5. Spoon into the prepared tin and level the top. Cook for 1-1 1/4 hours, until a skewer pushed into the center of the cake comes out clean. Remove the cake from the tin and leave to cool.
6. Beat the cream cheese and icing (confectioner's) sugar together, to make a thick frosting. Spread it over the top of the cake. Decorate with small colored candies, nuts or grated chocolate.

PS Cake as fresh veggies so it'll last a few days so try to eat it quick. It sure is yummy!

I'm a quarter (if not more, seeing as my dad's Puerto Rican) Puerto Rican myself and LOVE Spanish food. I'd be very interested in those recipes, Liz! They sound muy bueno! ;)

I'll see if I can translate them into English because my mom has them in spanglish, lol.

Arroz Con Dulce and Bread Pudding are Deserts and Coquito is a drink. Let me get to work, lol
