I bought 1000 Mealies and put them in a large tub with oats with a piece of paper covering half the tub over the substrate with apple on top of it. When they turn into beetles I move the beetles to another container. Am I right so far? When I put the beetles into another container and then put either bread and or a potato in there do I just wait till the beetles die or will I see little eggs on the bread or potato? Any help would be great thank you

Two minor suggestions:

a. separate out the "aliens" so the mealworms don't eat them. They don't need food at that stage. I keep mine in a plain plastic container

b. put the beetles in a separate container with the same "food" you're feeding the mealworms. After all, the baby mealies will need that food. After about 4 weeks, transfer the beetles that are still alive to a new container with mealworm food. Keep the old bedding that you just took the beetles out of because there should be mealie babies in there. This should be easier than having baby mealies on potato or carrot and dealing with a potentially moldy food item.
