I have a question about using the UTH...I was told that you should use around 2 inches of substrate when using a UTH. Is this true? Im currently using paper towels as substrate.

That really depends on your temps. For example I have a cheapo uth that only has my ground temps at 96 highest with only one layer of paper towels. So if your temps are fine now then there is no need to add more layers
